Peanut Butter Blondies Ingredients

100 grams Unsalted Butter softened, plus extra for greasing
150 grams Peanut Butter crunchy
1 tsp Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)
175 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 Free Range Eggs Free Range Eggs
75 grams White Chocolate (Silver Spoon Create) plus extra to decorate White Chocolate (Silver Spoon Create)
75 grams Walnuts chopped, plus extra to decorate
125 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 tsp Baking Powder
Dark Chocolate (Silver Spoon Create) melted, to decorate Dark Chocolate (Silver Spoon Create)
White Chocolate Chips (Silver Spoon Create) to decorate White Chocolate Chips (Silver Spoon Create)

How to make Peanut Butter Blondies

  1. Preheat the oven to 170°C/ 150°C fan/ 325°F/ Mark 3. Grease a 20cm/8 inch square tin with butter and line the base with baking paper method tip
  2. In a large bowl, beat the butter and peanut butter together until creamy, using an electric hand whisk at medium speed. Add the vanilla, sugar and the egg, and beat again until light and fluffy method tip
  3. Chop up the white chocolate and stir into the mixture along with the chopped walnuts
  4. Sift the flour and baking powder into the mixture and fold in, using a large metal spoon method tip
  5. Spoon the mixture into the prepared tin and smooth the top. Bake the mixture in the middle of the preheated oven for 35-40 minutes until it has a nice golden crust but is still fudgy in the middle
  6. Leave to cool in the tin. Decorate with white chocolate chunks and walnut pieces and drizzle over some melted dark chocolate. Cut into squares and serve method tip
