Barbie Cake Ingredients

225 grams Butter
225 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
4 Free Range Eggs beaten Free Range Eggs
2 tbsp Milk Milk
225 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
50 grams Cornflour
50 grams Almonds ground

Additional Ingredients

For the decoration:

1 barbie doll, legs removed
175 grams Apricot Jam
2 tbsp Water
Icing Sugar (Silver Spoon Homegrown) Icing Sugar (Silver Spoon Homegrown)
350 grams pink sugar paste
110 grams white sugar paste
Coloured Choco Beans (Silver Spoon Create) Coloured Choco Beans (Silver Spoon Create)

How to make Barbie Cake

  1. For the cake: Heat the oven to 160°C,325°F, gas 3. Grease a 900 ml/1 1/2 pint pudding basin. method tip
  2. Beat the butter and sugar in a mixing bowl until soft and light. Gradually beat in the eggs. method tip
  3. Sift in the flour and cornflour and stir in lightly. Gently stir in the ground almonds. method tip
  4. Spoon into the pudding basin and bake for 1-1 1/2 hours until firm and golden. Turn out and cool on a wire rack. method tip
  5. For the decoration: gently place the barbie doll head and body into the centre top of the cake.
  6. Heat the jam and water in a small pan until the jam has melted. Rub through a sieve and return to the pan. Boil for 1 minute and leave to cool.
  7. Roll out the pink sugarpaste on a surface dusted with icing sugar, into a circle to fit generously over the cake. method tip
  8. Brush the cake with most of the apricot glaze and place the pink sugar paste on the cake. Smooth the sugarpaste with your hands, forming pleats and frills, as in the photo.
  9. Roll out the white sugar paste on a surface dusted with icing sugar and cut 8-9 triangles to form the top of the skirt. Dampen the triangles with a little water and attach to the top of the cake.
  10. Attach the chocolate beans to the \'skirt\' with a dab of apricot glaze and attach sugar hearts to the centre of the beans and around the base of the skirt.
  11. Place the sugar flowers around the base of the barbie doll body and at the tip of the white sugarpaste triangles. method tip
  12. Pipe loops of white piping icing between the chocolate beans and attach sugar hearts before the icing sets.
  13. Sprinkle pink sparkling sugar on the sugar paste triangles and at the base of the skirt. Add the parasol to the cake.
