Snowflake Whoopie Pies Ingredients

100 grams Butter (softened)
175 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 Free Range Eggs (medium) Free Range Eggs
350 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 tsp Bicarbonate Of Soda
1 tsp Baking Powder
1 pinch Salt
1 tsp Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)
100 ml Milk Milk

Additional Ingredients

For the buttercream filling

50 grams Butter (softened)
200 grams Icing Sugar (Silver Spoon) Icing Sugar (Silver Spoon)
1 tsp Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)
 

Further Additional Ingredients

For the icing

150 grams Icing Sugar (Silver Spoon)
Silver Balls
Water

How to make Snowflake Whoopie Pies

  1. Heat the oven to 180°C (160°C for fan assisted ovens) Gas 5. Line 2-3 baking trays with baking parchment. method tip
  2. Cream the butter and sugar until light and fluffy, beat in the egg until smooth then stir in all the flour and milk to make a soft thick mixture. method tip
  3. Using an ice cream scoop place spoonfuls well spaced apart and bake for 15 minutes until golden brown and just firm to the touch.
  4. Allow to cool for 5 minutes before removing to a tray to cool.
  5. To make the filling, beat the butter, icing sugar and vanilla together until smooth, adding a drop of boiling water if necessary. Use the buttercream to sandwich the whoopies together.
  6. To make the icing, mix the icing sugar with 2 tsp of water to make very thick icing and drizzle it over the whoopies.
  7. Dust a work surface and thinly roll out the ready to roll icing. Use a snowflake cutter to cut out little snowflakes and place on top of the whoopies with edible silver balls. method tip
