Snowman Celebration Cake Ingredients

250 grams Butter (softened)
250 grams Caster Sugar (Silver Spoon Homegrown) Caster Sugar (Silver Spoon Homegrown)
5 Free Range Eggs (large) Free Range Eggs

250 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
1 tsp Baking Powder

How to make Snowman Celebration Cake

  1. Preheat the oven to 170°C, /Fan 150°C, /Gas Mark 5. Grease and line 2 x 7 inch round sponge tins. method tip
  2. Add the caster sugar to the soften butter and using a wooden spoon, or an electric hand held whisk, beat the butter and sugar until it is really smooth and creamy. method tip
  3. Beat the eggs together lightly with a fork, then add a drop at a time to the butter and sugar mixture, beating really well until smooth. method tip
  4. Using a large metal spoon fold in the vanilla extract, milk, baking powder and flour, lifting the mixture in a figure of eight to scoop up the flour and fold it in. method tip
  5. Divide the mixture evenly between the two cake tins. Bake for about 20-25 minutes until the mixture is golden and just firm in the centre. method tip
  6. Allow to cool for 5 minutes then remove from the tin and allow to cool completely. method tip
  7. To make the icing: beat the butter and sugar together until smooth, adding a little hot water if liked to help soften it and make a soft smooth consistency.
  8. To asseble: using a tea plate or saucer as a guide, cut one of the sponge cakes into a smaller circle for the head. Place this against the snowman body to form the shape of a snowman.
  9. Coat the whole cake with butter cream. Sprinkle with coconut.
  10. Mix a little red colouring into half the sugar paste. Roll out most of it to make the hat. Decorate with green coloured icing stars if liked. method tip
  11. Roll a little red icing to make a mouth, then roll the remaining red icing into a long thin sausage. Roll a similar size white icing sausage then twist the two together to make the scarf and trim for the hat. Roll the scarf flat and trim to make a long rectangle to wrap around the snowmans neck. Decorate the hat with a white icing bobble.
  12. To make the eyes, colour a tiny piece of white icing with blue, roll and cut out 2 circles, then top with a ball of white to make the pupils.
  13. To make the nose, colour a little icing with orange food colouring and make a cone, mark with the back of a knife to make the carrot nose.
