Turkish Delight Cake Ingredients

175 grams Golden Granulated Sugar (Billington's) Golden Granulated Sugar (Billington's)
2 Free Range Eggs Medium sized Free Range Eggs
150 ml Sunflower Oil
150 ml Milk Milk
1 tsp Bicarbonate Of Soda
225 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
110 grams Turkish Delight, rose and lemon flavours
25 grams Walnuts Chopped
25 grams Sultanas
25 grams Candied Peel

How to make Turkish Delight Cake

  1. Preheat the oven to 190°C/fan 180°C/gas mark 5. Grease and floured 20cm (8 in) round cake tin. method tip
  2. Whisk the sugar and eggs until light and frothy. method tip
  3. Gradually whisk in the oil, then the milk. method tip
  4. Sprinkle the bicarbonate of soda over the top and sift in the flour, mixing well to combine.
  5. Stir in the walnuts and sultanas. method tip
  6. Soften the Turkish Delight by rolling small pieces under your palms on a flat surface, then cut into small thin rolls.
  7. Pour half the cake mixture into the prepared cake tin and scatter the Turkish Delight over the surface.
  8. Cover with the remaining mixture and sprinkle the top with candied peel.
  9. Bake for about 1 hour. method tip
  10. Allow to cool in the tin before turning out. method tip
  11. Cut into thin slices to serve.
