Whoopie Pie Recipe Ingredients

100 grams Butter softened
175 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 Happy Eggs medium Happy Eggs
350 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 tsp Bicarbonate Of Soda
1.50 tsp Baking Powder
pinch Salt
1 tsp Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)
100 ml Milk Milk

Additional Ingredients

75 grams Butter softened
125 grams Icing Sugar (Silver Spoon Homegrown) Icing Sugar (Silver Spoon Homegrown)
 

Further Additional Ingredients

125 grams Fondant Icing (Silver Spoon)
20 ml Water

How to make Whoopie Pie Recipe

  1. Heat the oven to 180°C, 160°C Fan, Gas Mark 5. Line 2-3 baking trays with baking parchment method tip
  2. Cream the butter and sugar until light and fluffy, beat in the egg until smooth then stir in all the flour and milk to make a soft thick mixture. Using an ice cream scoop place spoonfuls well spaced apart, ( you will only get 6 on a tray) method tip
  3. Bake for 15 minutes until golden brown and just firm to the touch method tip
  4. Allow to cool for 5 minutes before removing to a tray to cool method tip
  5. Make the buttercream by beating the butter until, soft then adding in the icing sugar and beating until light and fluffy. Fill the cooled little cakes with buttercream. method tip
  6. Make the fondant icing and drizzle over the little bakes
