Chocolate Ale Fruit Cake Ingredients

390 grams Mixed Dried Fruit
250 ml Chocolate Ale or strong ale
100 grams Dark Muscovado Sugar (Billington's) Dark Muscovado Sugar (Billington's)
3 tsp Mixed Spice ground
2 Free Range Eggs beaten Free Range Eggs
85 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
Unsalted Butter for greasing
100 grams Self Raising Wholemeal Flour (Allinson) Self Raising Wholemeal Flour (Allinson)

How to make Chocolate Ale Fruit Cake

  1. Put the dried fruit into a large pan and cover with the bottled ale method tip
  2. Gently heat the fruit until the ale is hot, but not boiling. Remove from the heat, cover and preferably leave overnight
  3. When you are ready to cook the loaf, preheat the oven to 140°C/ 120°Cfan/ 275°F/ Mark1. and grease a 25x11cm (10x4.5 inch) loaf tin with butter method tip
  4. Add the sugar, flours, mixed spice and eggs to the fruit mixture. Stir well until all the ingredients are combined method tip
  5. Pour the mixture into the prepared loaf tin. Bake in the preheated oven for an hour and a quarter until risen, pale brown and firm to the touch. Take the loaf out of the tin and leave on a wire rack to cool, still in its tin method tip
  6. Remove from the tin and wrap the loaf tightly in cling film. Keep in a cool dry place. This loaf is delicious toasted and buttered with raspberry jam or served with a piece of strong mature cheese

"It came out alright, my husband thought it is good,mand just as it should be, but I felt it is on the sweet side, should have more apricot than rasin, perhaps that's why it is too sweet for me."
