Fantastic Fairy Cakes Ingredients

125 grams Butter softened
125 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
2 Happy Eggs medium lightly beaten Happy Eggs
1 tsp Vanilla Extract (Nielsen-Massey) Vanilla Extract (Nielsen-Massey)
125 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
2 tbsp Milk Milk

Additional Ingredients

250 grams Fondant Icing (Silver Spoon) Fondant Icing (Silver Spoon)
45 ml Water warm

How to make Fantastic Fairy Cakes

  1. Preheat the oven to 190°C/170°C fan/375°F/Gas mark 5. Prepare a 12 hole cake tin, use paper cases or butter the base and sides of the holes before filling with mixture method tip
  2. In a mixing bowl beat the softened butter and sugar until fluffy and pale. You can use a wooden spoon or an electric whisk method tip
  3. Whisk in the beaten eggs, a little at a time, then beat in the vanilla.
  4. Sift in half of the flour and fold into the mixture. Add the milk and the rest of the flour and fold until well combined method tip
  5. Spoon into the tin and bake for 12 minutes or until risen with a golden top. Allow to cool for ten minutes on a rack before removing from the tin method tip
  6. Have fun icing your fairy cakes with Silver Spoon Fondant Icing Sugar, just add fruit juice or cordial to give it colour and flavour
