Rocky Road Cup Cakes Ingredients

175 grams Butter soft
175 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
175 grams Self Raising Flour (Allinson Nature Friendly) sifted Self Raising Flour (Allinson Nature Friendly)
2 tbsp Cocoa Powder
1 tsp Baking Powder
50 grams Dark Chocolate Chips (Silver Spoon Create) dark or milk or white Dark Chocolate Chips (Silver Spoon Create)
50 grams Chopped Nuts

200 grams Golden Icing Sugar (Billington's) Golden Icing Sugar (Billington's)
50 grams Cocoa Powder
125 grams Butter soft
 

Further Additional Ingredients

chopped walnuts
Mini marshmallows
Digestive biscuits, broken
Glace Cherries
Dark Chocolate Chips (Silver Spoon Create) dark or milk or white
4 Dark Chocolate Flavour Cake Covering (Silver Spoon Create) 4 squares melted

How to make Rocky Road Cup Cakes

  1. Preheat the oven to 180C/160C fan/350F, gas 4. Sit 12 paper cases into a muffin tin.
  2. Beat together the eggs, butter, golden caster sugar and flour with an electric beater until smooth and fluffy. Fold in the chocolate chips and chopped nuts. Spoon the mixture into the cases about 2/3 full. method tip
  3. Bake for 15 – 20 minutes or so, until risen and firm to the touch. method tip
  4. To make the rocky road topping, Beat the butter until soft and smooth. Sift the icing sugar and cocoa powder in a bowl and add to the butter until the mixture all combined and is light and fluffy.
  5. Spoon or pipe the icing over the top and then scatter over the rocky road topping slightly pressing the toppings into the icing.
  6. Drizzle the melted chocolate over each cup cake.
