Strawberry & Vanilla Cupcakes Ingredients

120 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
140 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
40 grams Butter Unsalted, softened
Salt Pinch
120 ml JUST MILK Whole JUST MILK
1.50 tsp Baking Powder
1 Silver Spoon Create Vanilla Paste sachet
1 Free Range Eggs (Happy Eggs) large Free Range Eggs (Happy Eggs)

1 sachet Strawberry Flavour Icing Sugar (Silver Spoon Cakecraft) Strawberry Flavour Strawberry Flavour Icing Sugar (Silver Spoon Cakecraft)
15 ml Water Warm
100 grams Butter Unsalted, softened

How to make Strawberry & Vanilla Cupcakes

  1. Preheat the oven to 190°C, Gas 5, and line a 12 bun muffin tin with muffin cases. method tip
  2. Using a hand held electric whisk or freestanding mixer mix the butter, sugar, flour, baking powder and salt on a low speed until it is the texture of breadcrumbs
  3. Put the eggs in a jug and whisk by hand. Add the milk and vanilla and mix together method tip
  4. Pour ¾ of the milk mixture into the dry ingredients & mix on low speed, then mix on a medium speed until smooth & thick
  5. Spoon the mixture into the paper cases until ½ full.
  6. Bake in the oven for 18-20 minutes or until risen and springy to the touch.
  7. Leave to cool slightly and then place on a wire rack method tip
  8. To make the frosting mix the icing sugar and water by hand to form a paste, then add the butter, mixing slowly, then increase the speed to high and whisk until soft & fluffy
  9. Top the cooled cupcakes with frosting using a palette knife.
  10. Sprinkle each cupcake with strawberry buttons. You can melt these buttons according to the instructions on the pack, then drizzle over the frosted cakes
