Low Calorie Baked Chocolate Cheesecake Ingredients

12 Digestive biscuits low fat
Ginger 1 stem, drained and finely chopped
30 grams Stork or spread, melted Stork
450 grams Quark skimmed milk soft cheese
2 tbsp Cocoa Powder level tbsps
2 tbsp Half Spoon Granulated Sugar (Sliver Spoon) Half Spoon Granulated Sugar (Sliver Spoon)
3 Free Range Eggs Free Range Eggs
Dark Chocolate (Silver Spoon Create) 1-2 squares good quality, grated Dark Chocolate (Silver Spoon Create)
50 grams Raspberries fresh

How to make Low Calorie Baked Chocolate Cheesecake

  1. Preheat the oven to 170°C, 325°F, Gas Mark 3. method tip
  2. Place the biscuits and ginger in a food processor and whiz in a crushed fine crumbs. method tip
  3. Mix the crushed biscuits with the low-fat spread and press down evenly into the base of a 20 cm/8 in flan tin with a removable base.
  4. Beat the Quark until smooth. Add in the cocoa powder, sugar and eggs and beat until smooth.
  5. Pour into the flan tin to cover the base and level the top. Bake in the preheated oven for about 40 minutes until cooked and firm.
  6. Set aside to cool and remove from the tin. When ready to serve, cover with the grated chocolate and decorate with the raspberries.

"Made this cheesecake the other day and it was really simple.. and will be quite quick once you get the hang of it.. I wouldn't recommend this cake it you don't like sweet things but otherwise it is really good and you can be quite creative with it. :)"
