Low Calorie Truvia Blueberry Muffins Ingredients

350 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
3 tsp Baking Powder
6 tbsp Calorie Free Sweetener (Truvia) Calorie Free Sweetener (Truvia)
1 Free Range Eggs (large) Free Range Eggs
260 ml Buttermilk
1 tsp Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)
3 tbsp Vegetable Oil
250 grams Blueberries

How to make Low Calorie Truvia Blueberry Muffins

  1. Preheat the oven to 180°C / Gas 4. Line a muffin tin with muffin cases. method tip
  2. Sieve the flour and baking powder into a bowl and add the Truvia. method tip
  3. In a jug mix the egg, buttermilk, vanilla and vegetable oil, then add to the flour and mix until well combined.
  4. Carefully fold in the blueberries ensuring they are evenly distributed.
  5. Spoon evenly into the muffin cases until they are 2/3 full, then bake in the oven for 25-30 minutes until springy to the touch. method tip
  6. Cool on a wire rack.

"This recipe was my first attempt at baking anything. It was a bit difficult to mix as the mixture was very stiff. The final results weren't bad although it tasted more like a scone than a muffin. I put this down to the low calorie ingredients. In saying that, all 12 muffins quickly disappeared, as did the second batch I made. "
