Smoky Tea Bread Ingredients

450 grams Country Grain Bread Flour (Allinson) Country Grain Bread Flour (Allinson)
1 tsp Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 tsp Salt
4 Glace Ginger Chopped
1 tsp Ground Ginger
7 grams Easy Bake Yeast (Allinson) Easy Bake Yeast (Allinson)
2 tbsp Honey
1 tbsp Sunflower Oil
1 Free Range Eggs Beaten Free Range Eggs
250 ml Lapsang Souchong Tea Warm and made very strong

How to make Smoky Tea Bread

  1. Place all of the ingredients into a mixer with a dough hook attached.
  2. Mix to a soft dough and knead for 5 minutes.
  3. If mixing by hand, put the dry ingredients into a bowl and sprinkle on the yeast.
  4. Mix to a soft dough using the honey, oil, egg and warm tea. Turn onto a floured board and knead for 10 minutes. method tip
  5. Shape into a large loaf and place into a greased loaf tin (12 x 22cm/4½ x 9½"). method tip
  6. Cover and leave to prove until double in size. method tip
  7. Bake at 190°C/fan 170°C/Gas Mark 5 for 30 minutes. method tip
