How to make Royal Icing

  1. Accurately measure 75ml of cold water into a deep bowl method tip
  2. Weigh 450g of the packet of Royal Icing and tip into the bowl. Ues an electric mixer starting slowly then gradually increasing to a high speed and beat for approximately 5 minutes. You can use a wooden spoon but this will take longer. method tip
  3. When the icing stands in soft peaks it is ready tor use. At no time allow the icing to come too stiff and heavy if the icing is too soft, beat in a little Silver Spoon Icing Sugar, a teaspoon at a time. A few drops of water will thin the icing if too stiff.
