How to make Passion Fruit Icing

- Scoop the seeds and flesh of one passion fruit and press through a sieve.
- Melt butter and stir in the passion fruit juice and lemon juice.
- Add about sifted icing sugar to make a pouring consistency. Pour over a sponge cake for a fruity flavour.
