This recipe uses
How to make Banana Butter

- Mash the bananas to a fine pulp
- Place 1 ½ lbs banana pulp in a large saucepan with the lemon juice, butter and sugar
- Heat slowly, stirring until the sugar has dissolved
- Bring to a full rolling boil and boil hard for 1 minute

Remove from heat and stir in Certo
- Skim, pot and cover in the usual way
