  1. Preheat the oven to 180°C/Gas 4. Line a couple of baking trays with greaseproof paper.
  2. Sieve the flour, ginger and bicarbonate of soda into a large bowl. Using your fingertips rub in the butter until you get a fine breadcrumb texture, then add the sugar and stir in. method tip
  3. Whisk the beaten egg and the golden syrup and add to the bowl. Mix to form a dough.
  4. Lightly flour your work surface then roll out the dough to a thickness of 3-4mm, then using letter cutters, cut out the letters you need to spell MERRY CHRISTMAS, and lay each letter out onto the baking trays.
  5. Use a skewer or the pointy end of a teaspoon to make hole in the letters where you will thread the ribbon or string. Then bake in the oven for about 10 minutes until golden brown.
  6. Once baked, leave to cool on a wire rack, then thread ribbon or string through the holes to make your garland.
  7. Why not add a little something extra and try icing an outline around each biscuit with royal icing in a piping bag or try white writing icing.
