250 grams Butter unsalted, softened
250 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
4 grams Happy Eggs Happy Eggs
1 tsp Pure Vanilla Extract Blend (Nielsen-Massey) Pure Vanilla Extract Blend (Nielsen-Massey)
185 grams Self Raising Flour (Allinson Nature Friendly) sieved Self Raising Flour (Allinson Nature Friendly)
60 grams Plain White Flour (Allinson Nature Friendly) sieved Plain White Flour (Allinson Nature Friendly)

How to make Message Cupcakes

  1. Preheat the oven to 180°C/fan oven 160°C, gas 4. Line two muffin tins with cup cake cases. method tip
  2. Put the butter and sugar in a bowl and beat until pale and creamy. This could take up to 10 minutes to get a fluffy mixture. method tip
  3. Add the eggs, one at a time, then add the vanilla extract and beat until well combined. method tip
  4. If the mixture looks curdled add a spoonful of the flour. Sift and fold in the flours together. Add enough milk for a smooth batter that is of dropping consistency. method tip
  5. Spoon the mixture into the cases to about ¾ full. Bake for 20 minutes. Remove from the oven and leave to cool for 5 minutes. Stand the cakes out onto a wire rack to cool.
  6. Decorating Ideas - Fondant Icing Sift the Fondant icing sugar into a small bowl, add just enough warm water a drop at a time to give a smooth, thick icing. Add a few drops of a food colouring and beat to give an even colour. Spoon a little icing over the cooled cakes so that the tops are almost covered and leave to set for a few minutes. Add any sprinkle before the icing sets completely.
  7. Decorating Ideas - Ready to Roll Icing Shapes Colour ready rolled icing in the colour of your choice. To do this knead the Ready to Roll Icing, add a few drops of food colour and knead again to spread the colour through the icing. Repeat until you get the desired colour. Cut a selection of patterns, letters or numbers for your cakes. Spread some writing icing onto the cakes and cover with the rolled icing shapes. Decorate using sprinkles and writing icing.
  8. Decorating Ideas - Designer Icing Use the designer icing to pipe letters and shapes onto the cup cakes.
