Teatime Treat Fairy Cakes Ingredients

200 grams Sunflower Spread or Margarine
200 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
3 Free Range Eggs (Happy Eggs) Medium sized, beaten Free Range Eggs (Happy Eggs)
1 tsp Pure Vanilla Extract Blend (Nielsen-Massey) Pure Vanilla Extract Blend (Nielsen-Massey)
200 grams Self Raising Flour (Allinson Nature Friendly) Self Raising Flour (Allinson Nature Friendly)
0.50 tsp Baking Powder

30 grams Billington's Golden Icing Sugar
30 grams Cocoa Powder Sifted
120 grams Sunflower Spread
chopped fruit, e.g strawberries, mango, banana

How to make Teatime Treat Fairy Cakes

  1. Preheat the oven to 180 C/170 C fan/gas mark 5
  2. Line a patty tin with cake cases, if you have no cake cases, grease and flour the individual holes.
  3. Beat together the sunflower spread, sugar, eggs and vanilla extract until the mixture is smooth. Stir in the flour and baking powder. method tip
  4. Spoon the mix into the cake cases and bake for 12-15 minutes until a skewer comes out clean when inserted.
  5. To make the icing, mix together the icing sugar, cocoa and sunflower spread. Put a teaspoon on each cake, and top with a piece of chopped fruit.
