How to make Knickerbocker Glory

- Press half of the raspberries through a sieve into a bowl. Cut the strawberries in half.
- Place a few raspberries and strawberries in a tall glasses and top up with scoops of ice cream and fruit.
- Pipe a swirl of cream on top and drizzle with the raspberry sauce and top with strawberries or raspberries, and a fan wafer or café curl.
