Lamb Skewers in Garlic and Balsamic Marinade

Lamb Skewers in Garlic and Balsamic Marinade Ingredients
| 2 tbsp | Olive Oil | |
| 1 tbsp | Balsamic Vinegar | |
| 1 tbsp | Cider Vinegar | |
| 2 tbsp | Molasses Sugar (Billington's) | ![]() |
| 2 | Garlic 2-3 cloves, peeled and crushed | |
| 2 | Shallots peeled and slices | |
| pinch | Salt | |
| pinch | black pepper | |
| 700 grams | lamb leg steaks cut into 3 cm cubes |
Additional Ingredients
| 1 | Onion red | |
| 3 | Tomatoes quartered | |
| 0.50 | cucumber cubed | |
| 100 grams | Feta Cheese cubed | |
| 100 grams | olives | |
| 2 | little gem lettuce | |
| 4 tbsp | Olive Oil | |
| 2 tbsp | Parsley flat leaf, chopped |

How to make Lamb Skewers in Garlic and Balsamic Marinade

- Mix together the olive oil, vinegars, molasses, garlic and shallots. Season to taste. Pour into a shallow dish and add the lamb. Toss gently and leave to marinade for at least 30 minutes or up to 3 hours.
- Place the red onion, tomatoes, cucumber, feta and olives in a bowl. Drizzle with the olive oil, season, then toss well with the little gem lettuce. Serve in a large salad bowl topped with chopped fresh flat-leaf parsley
- Thread onto 8 skewers and cook for 8-10 minutes under a medium-hot preheated grill or on the barbecue, turning from time to time, until browned but still slightly pink in the centre. Brush with the marinade as you cook.
- Serve the lamb skewers along side the greek salad
