Lamb Skewers in Garlic and Balsamic Marinade Ingredients

2 tbsp Olive Oil
1 tbsp Balsamic Vinegar
1 tbsp Cider Vinegar
2 tbsp Molasses Sugar (Billington's) Molasses Sugar (Billington's)
2 Garlic 2-3 cloves, peeled and crushed
2 Shallots peeled and slices
pinch Salt
pinch black pepper
700 grams lamb leg steaks cut into 3 cm cubes

Additional Ingredients

1 Onion red
3 Tomatoes quartered
0.50 cucumber cubed
100 grams Feta Cheese cubed
100 grams olives
2 little gem lettuce
4 tbsp Olive Oil
2 tbsp Parsley flat leaf, chopped

How to make Lamb Skewers in Garlic and Balsamic Marinade

  1. Mix together the olive oil, vinegars, molasses, garlic and shallots. Season to taste. Pour into a shallow dish and add the lamb. Toss gently and leave to marinade for at least 30 minutes or up to 3 hours.
  2. Place the red onion, tomatoes, cucumber, feta and olives in a bowl. Drizzle with the olive oil, season, then toss well with the little gem lettuce. Serve in a large salad bowl topped with chopped fresh flat-leaf parsley
  3. Thread onto 8 skewers and cook for 8-10 minutes under a medium-hot preheated grill or on the barbecue, turning from time to time, until browned but still slightly pink in the centre. Brush with the marinade as you cook.
  4. Serve the lamb skewers along side the greek salad
