Pork Chops in Sticky Plum Marinade

Pork Chops in Sticky Plum Marinade Ingredients
| 4 tbsp | plum jam | |
| 2 tbsp | Molasses Sugar (Billington's) | ![]() |
| 6 tbsp | light soy sauce | |
| 1 | Orange juice and zest | |
| Ginger 3cm, fresh, peeled and grated | ||
| 2 | Garlic cloves peeled and finely chopped | |
| 2 | Spring Onions finely chopped | |
| 3 tbsp | coriander fresh, chopped |

- Place the jam, molasses, soy sauce, orange zest and juice, ginger, garlic, and spring onions in a small pan. Heat until the molasses and jam is dissolved. Stir and leave to cool completely. Add the corriander
- When completely cooled, pour into a shallow bowl and add the pork chops. Marinade for 30 minutes
- Heat a griddle until smoking (could also be cooked on the barbecue) and add the pork chops and cook for for 6-8 minutes, then turn them over and cook for a further 8-10 minutes, brushing regularly with the marinade, cook until the chops are thoroughly cooked, the juices run clear and there is no pink meat. Serve with a mixed salad and potato wedges
