Pork Chops in Sticky Plum Marinade Ingredients

4 tbsp plum jam
2 tbsp Molasses Sugar (Billington's) Molasses Sugar (Billington's)
6 tbsp light soy sauce
1 Orange juice and zest
Ginger 3cm, fresh, peeled and grated
2 Garlic cloves peeled and finely chopped
2 Spring Onions finely chopped
3 tbsp coriander fresh, chopped

  1. Place the jam, molasses, soy sauce, orange zest and juice, ginger, garlic, and spring onions in a small pan. Heat until the molasses and jam is dissolved. Stir and leave to cool completely. Add the corriander
  2. When completely cooled, pour into a shallow bowl and add the pork chops. Marinade for 30 minutes
  3. Heat a griddle until smoking (could also be cooked on the barbecue) and add the pork chops and cook for for 6-8 minutes, then turn them over and cook for a further 8-10 minutes, brushing regularly with the marinade, cook until the chops are thoroughly cooked, the juices run clear and there is no pink meat. Serve with a mixed salad and potato wedges
