This Last Minute Mincemeat is perfect for Christmas. Give a jar of this fresh and zesty mincemeat as a great gift. Made from store cupboard ingredients, or keep in the fridge with a pack of shortcrust pastry, to rustle up a few mince pies and fill the house with Christmassy smells. Make this look pretty by wrapping in layers of tissue paper and tie on top of the jar for a dramatic look.

Last Minute Mincemeat Ingredients
| 200 grams | Natural Glace Cherries (Billington's) chopped | ![]() |
| 150 grams | Currants | |
| 100 grams | Sultanas | |
| 100 grams | Mixed Peel | |
| 75 grams | Cranberries dried | |
| 200 grams | Demerara Sugar (Billington's) | ![]() |
| 100 grams | Butter unslated | |
| 3 tbsp | Brandy | |
| 1 | Lemon juice grated rind | |
| 1 | Orange juice and grated zest | |
| 1 tbsp | Cinnamon ground | |
| 1 tsp | Nutmeg grated | |
| 1 tsp | Allspice, ground |

How to make Last Minute Mincemeat

- Chop the cherries, and mix together with the currants, sultanas, mixed peel, cranberries and sugar
- Melt the butter over medium heat. Remove from the heat and stir in the brandy, lemon and orange juice and the spices. Pour this mix over the fruit. Mix well until all is thoroughly combined. Set aside to steep for at least 10 minutes
- Use immediately, or transfer to a lidded container and refrigerate until required
- To give as a gift, spoon into jars and attach a label with the name and date. Wrap in festive wrapping
- Keeps for up to 2 weeks
