225 grams Plain Wholemeal Flour (Allinson) Plain Wholemeal Flour (Allinson)
100 grams Granola
75 grams Granola, for topping
2 tsp Baking Powder
1 tsp mixed spice
1 tbsp Poppy Seeds
50 grams protein powder (available from Health Food Shops)
150 grams chopped dried apricots
50 grams Sultanas
3 tbsp Vegetable Oil
2 Free Range Eggs Free Range Eggs
175 ml Milk Milk
100 ml Clear Honey
Icing Sugar (Silver Spoon Homegrown) for dusting Icing Sugar (Silver Spoon Homegrown)

How to make Granola Breakfast Muffins

  1. Preheat the oven to 180°C and line a large 6 piece American muffin tray with cases. method tip
  2. In a large bowl mix the flour, baking powder, mixed spice and poppy seeds, then add 100g granola and the protein powder, apricots and sultanas. method tip
  3. In a separate bowl mix the milk, honey, eggs and vegetable oil. Add these wet ingredients to the dry ingredients and fold gently to incorporate, but be careful not to overmix.
  4. Fill each case with the mixture and top with the remaining 75g granola. Bake in the oven for 25-30 minutes, or until a skewer comes out clean. Place on a cooling rack and dust lightly with icing sugar to serve. method tip

"Absolutely delicious! I will definitely be making these again. Though next time i'll remember not to make the mistake of using paper muffin cases - the amounts of honey and fruit in the mix obviously meant the muffins ended up stuck to the cases and they can be quite fussy to peel off. Next time i plan just to grease the muffin tin and go paper case-less. Personally, i made a few alterations to the recipe based on what i had - for instance, i went 100g of apricots and 100g of raisins instead of 100 to 50, and i didn't have mixed spice so instead i just used cinnamon & nutmeg, lastly i didn't bother with the protein powder, but these are all small changes and the end result was still the delicious breakfast muffin i can grab on my way out the door."
