Muesli Muffins Ingredients

75 grams Wholemeal Plain Flour (Allinson) Wholemeal Plain Flour (Allinson)
75 grams Muesli
1.50 tsp Baking Powder
1 Medium Egg
150 ml JUST MILK JUST MILK
2 tbsp Clear Honey

How to make Muesli Muffins

  1. Pre-heat the oven to 190 C/Gas Mark 5. Half fill an oven proof container - a small cake tin is ideal - with water. Line the muffin tin with muffin papers, or grease and flour each hole individually.
  2. Mix together the flour, muesli and baking powder in a bowl.
  3. In a separate bowl mix together the egg, milk and honey. Add this to the dry ingredients and fold gently until just blended together.
  4. Spoon into the muffin papers, about two-thirds full. Bake for 20 - 25 minutes until golden in colour.
  5. Cool on a wire rack. Enjoy slightly warm and fresh that day or leave until completely cool. The muffins will keep a couple of days in an air tight container....if you can resist them!

"Used SF wholemeal flour and slightly less baking powder which worked well. The honey makes them just sweet enough. Lovely recipe! "
