Ingredients
| 225 grams | Allinsons Wholemeal Self Raising Flour | ![]() |
| ½ tsp | Salt | |
| 100 grams | Cougettes Grated | |
| 100 grams | Red Leicester Cheese Grated | |
| 175 ml | Milk | |
| 1 tsp | Pesto | |
| 1 | Egg | |
| 2 tbsp | Olive Oil | |
| 12 | Cherry Tomatoes |
Method

- Preheat the oven to 200ºC/Fan 180ºC/Gas Mark 6. Line a 12 hole muffin tin with paper muffin cases.
- Combine the flour, salt, courgettes and cheese. Season with freshly ground black pepper.
- Mix together the milk, pesto, egg and oil and pour into the dry ingredients. Gently stir together until just combined.
- Spoon the muffin mixture into the paper cases. Pierce each tomato with a sharp knife and put a tomato on top of each muffin.
- Bake for 20-25 minutes until well risen, golden and firm.

"I altered this recipe a little and replaced the courgette with onion and added more pesto for extra flavour. These are absolutely delicious and very easy to make. Great for snacks for lunch boxes."
