Spiced Apple Muffin

These are easy midweek baking, making good use of our delicious eating apples. Add a pinch of black pepper for a more grown up flavour to tingle the palate. TOP TIP: Apples softened in this way can be added or spooned over other desserts too-pancakes, ice cream or waffles

250 grams Golden Granulated Sugar (Billington's) Golden Granulated Sugar (Billington's)
150 grams Butter Diced softened
3 Apples eating, finely chopped
400 grams Self Raising Flour (Allinson Nature Friendly) Self Raising Flour (Allinson Nature Friendly)
2 tsp Baking Powder
Salt pinch
2 Happy Eggs Beaten Happy Eggs
100 ml JUST MILK JUST MILK
100 ml Sunflower Oil
Golden Granulated Sugar (Billington's) For Sprinkling Golden Granulated Sugar (Billington's)
1 tsp Cinnamon

How to make Spiced Apple Muffin

  1. Pre heat the oven to 180 C/ 170 C fan/ gas mark 4. Line the muffin tin with muffin papers or grease and flour each hole.
  2. Take a tablespoon each of sugar and butter and melt over medium heat in a small pan. Add the apples and stir over heat for 2 minutes until slightly soft. Remove from heat.
  3. Mix together the flour, baking powder, sugar, salt and cinnamon. Rub in the remaining butter. make a well in the middle and add the eggs, milk and oil. Stir all together until blended. Stir all together until blended. Stir in the apple.
  4. Spoon the mix into the muffin tin and sprinkle with granulated sugar. Bake for 25 minutes, or until a skewer comes our clean when inserted into the middle. Cool on a rack. Store in an airtight container for up to 7 days.

"These were amazing. The measurements make way more than 12 and I was using muffin tins, so that's incorrect, more like 24. You could rename them apple crumble cakes, as they have that texture. Great cakes so easy to make! "
