Tiramisu Mini Treats Ingredients

50 grams Dark Chocolate
50 grams Butter unsalted
1 Happy Eggs Happy Eggs
1 tbsp Instant expresso powder
1 tbsp Warm Water boiling
50 grams Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
2 tbsp Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
0.50 tsp Baking Powder
100 grams Mascarpone cheese
75 grams Billington's Golden Icing Sugar sifted

How to make Tiramisu Mini Treats

  1. Preheat the oven to 180 C, 170 C fan, Gas Mark 4. Line the mini muffin tin with papers, or prepare with grease and flour.
  2. Put the chocolate and butter in a non metalic heatproof bowl. Set over a pan of simmering water, and melt the chocolate and butter together. Allow to cool slightly.
  3. Whisk the egg with the sugar well, until blended. Stir in the melted chocolate and butter. Dissolve the expresso powder in the boiling water and stir this in. Fold in teh flour and baking powder until the mix is even. Spoon into the mini muffin tin and bake for 10 - 12 minutes.
  4. Meanwhile, mix together the mascarpone and icing sugar. To serve, spoon a little of the mascarpone frosting on top of each mini muffin and sift over the cocoa. Serve with coffee.

"Just tried this recipe for the first time - the cakes themselves are delightfully light in texture but still flavoursome. I think the portion size would be better if 6-9 cakes were made from this mix rather than 12 - a little on the thin side. We taste tested the plain cakes: very good, then cakes with cream cheese icing: even better with refreshing tasting topping. I finally decorated some with the chocolate frosting from the Toffee Mocha Cupcakes recipe (to which I also added a teaspoon of rum flavouring) before putting the cream cheese icing on - Out Of This World! Really gave an authentic tiramisu richness and indulgence. This may become a new family favourite."
