Apple, Apricot and Cardamon Chutney Ingredients
| 450 grams | Onion finely chopped | |
| 300 ml | white malt vinegar | |
| 900 grams | Apple(s) cooking, peeled and cored weight | |
| 2 tsp | Cardamom Pods crushed | |
| 350 grams | Light Muscovado Sugar (Billington's) | ![]() |
| 110 grams | Apricots dried, rouhgly chopped | |
| pinch | Salt | |
| pinch | pepper freshly ground |

How to make Apple, Apricot and Cardamon Chutney

- Put the onions and half the vinegar into a large pan and bring to the boil. Simmer gently for 10 minutes
- Cut the apples into small pieces and add to the pan with the remaining vinegar, cardamom, sugar, apricots and a sprinkling of salt and pepper. Stir over a low heat until the sugar has dissolved completely, then increase the heat and simmer steadily, stirring occasionally until the mixture is very thick.
- Spoon into hot sterilised jars, seal and label. Leave to mature in a cool dark cupboard for up to 3 months.
