Apple, Apricot and Cardamon Chutney Ingredients

450 grams Onion finely chopped
300 ml white malt vinegar
900 grams Apple(s) cooking, peeled and cored weight
2 tsp Cardamom Pods crushed
350 grams Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
110 grams Apricots dried, rouhgly chopped
pinch Salt
pinch pepper freshly ground

How to make Apple, Apricot and Cardamon Chutney

  1. Put the onions and half the vinegar into a large pan and bring to the boil. Simmer gently for 10 minutes
  2. Cut the apples into small pieces and add to the pan with the remaining vinegar, cardamom, sugar, apricots and a sprinkling of salt and pepper. Stir over a low heat until the sugar has dissolved completely, then increase the heat and simmer steadily, stirring occasionally until the mixture is very thick.
  3. Spoon into hot sterilised jars, seal and label. Leave to mature in a cool dark cupboard for up to 3 months.
