Nectarine Relish

This spiced Nectarine Relish is gorgeous. It will keep in an airtight container in the refrigerator for 2 weeks. Ideally served with fresh bread, cheddar cheese, ham or pates.

Nectarine Relish Ingredients
| 1 tsp | coriander seeds | |
| 1 tsp | cumin seeds | |
| 0.50 tsp | fennel seeds | |
| 8 | Nectarine slightly underipe and cut into 1.5cm chunks | |
| 2 | Red Onion cut into 1.5cm chunks | |
| 0.50 tbsp | Fresh Rosemary chopped | |
| 5 tbsp | Golden Granulated Sugar (Billington's) | ![]() |
| 4 tbsp | white wine vinegar |

How to make Nectarine Relish

- Place the coriander, cumin and fennel seeds in a pestle and mortar and grind to a quite a fine powder.
- Add to a non stick saucepan with the remaining ingredients and 200ml (7 fl oz) water. Slowly bring to the boil, allowing the sugar to dissolve and boil for 20-25 minutes, stirring occasionally until most of the liquid has evaporated and the relish has thickened
- Allow to cool and serve with a strong Cheddar cheese, hams or pates.
- The relish can be stored in an airtight container in the refrigerator for 2 weeks.
