Nectarine Relish Ingredients

1 tsp coriander seeds
1 tsp cumin seeds
0.50 tsp fennel seeds
8 Nectarine slightly underipe and cut into 1.5cm chunks
2 Red Onion cut into 1.5cm chunks
0.50 tbsp Fresh Rosemary chopped
5 tbsp Golden Granulated Sugar (Billington's) Golden Granulated Sugar (Billington's)
4 tbsp white wine vinegar

How to make Nectarine Relish

  1. Place the coriander, cumin and fennel seeds in a pestle and mortar and grind to a quite a fine powder.
  2. Add to a non stick saucepan with the remaining ingredients and 200ml (7 fl oz) water. Slowly bring to the boil, allowing the sugar to dissolve and boil for 20-25 minutes, stirring occasionally until most of the liquid has evaporated and the relish has thickened
  3. Allow to cool and serve with a strong Cheddar cheese, hams or pates.
  4. The relish can be stored in an airtight container in the refrigerator for 2 weeks.
