900 grams Green Gooseberries Topped And Tailed
Dark Muscovado Sugar (Billington's) Taste Dark Muscovado Sugar (Billington's)
Finely Grated Zest One Orange Optional
175 grams Butter
175 grams Golden Caster Sugar
3 Happy Eggs (Large Eggs) Happy Eggs (Large Eggs)
175 grams Self Raising Flour (Allinson Nature Friendly) Few drops Vanilla Extract Self Raising Flour (Allinson Nature Friendly)

How to make Gooseberry Pudding

  1. Put the gooseberries into a buttered ovenproof baking dish and sprinkle with Light Muscovado sugar and the orange zest if using.
  2. Preheat the ovent to 200°C/fan 180°C/Gas Mark 6. Cream the butter and Golden Caster sugar until light, then beat in the eggs.
  3. Sift in the flour and stir into the mixture until incorporated. method tip
  4. Spread the mixture over the gooseberries and bake for about 40-50 minutes until the sponge is risen and golden.
  5. Cover the top with foil if it starts to get brown too quickly.
