300 grams Mincemeat good quality
140 grams Marmalade fine shred, orange
200 grams Molasses Sugar (Billington's) Molasses Sugar (Billington's)
4 tbsp Black Treacle (Silver Spoon) Black Treacle (Silver Spoon)
3 Happy Eggs beaten Happy Eggs
4 tbsp Whisky
100 grams Butter frozen, then grated

How to make Last Minute Christmas Pudding

  1. Butter and line the base of a 1.5 Lt pudding basin, which is suitable for use in a microwave, with greaseproof paper. In a large bowl, stir the ingredients together, adding them one at a time in the order listed above. Stir to combine evenly.
  2. TIp in to the prepared pudding basin and cover with a disk of greaseproof paper. Place the pudding on a plate and microwave on Medium for 20 - 25 minutes until cooked and a skewer inserted comes out clean. the leave to stand for 5 minutes, then turn out and enjoy served with brandy butter.
