Ingredients

900 ml Double Cream
250 grams Billington's Golden Caster Sugar
4 Lemon zest and juice

Method

  1. Put the ingredients into a pan and heat gently, stirring occasionally. Bring to the boil and gently for 5 minutes.
  2. Remove from the heat and leave to stand for 15 minutes. Strain through a sieve into a jug.
  3. Pour the mixture into remekin dishes or small coffee cups and chill overnight before serving.

"I wanted a refreshing desert to finish off a heavy meal so tried these. They where fantastic so easy to make, taste lovely and best off all my dinner guest thought I was so clever(if only they knew how easy they where). I have also made these using oranges instead of lemons and they are justas lovely. Thank you baking mad. "
