Classic Chocolate Mousse Ingredients

125 ml Double Cream
125 grams Plain Chocolate, chopped
1 tbsp Brandy
2 Free Range Eggs (Happy Eggs) separated Free Range Eggs (Happy Eggs)

How to make Classic Chocolate Mousse

  1. Heat the cream in a small pan until it just reaches boiling point then remove from the heat. Add the chocolate and stir until it has melted. Add the brandy and whisk in the egg yolks. method tip
  2. In a clean grease free bowl, whisk the egg whites until they form stiff peaks, then using a metal spoon, gently fold in the chocolate mixture. Pour into individual bowls or glasses and chill for a couple of hours before serving
