Double Choc Chip Cookies Ingredients

110 grams Butter unsalted, softened
200 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)

2 Pure Vanilla Extract Blend (Nielsen-Massey) drops Pure Vanilla Extract Blend (Nielsen-Massey)
165 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
Pinch of Salt
0.50 tsp Baking Powder
0.50 tsp Bicarbonate Of Soda
30 grams Cocoa Powder
100 grams Dark Chocolate Chips (Silver Spoon Create) Dark Chocolate Chips (Silver Spoon Create)

How to make Double Choc Chip Cookies

  1. Heat the BBQ, if possible turning the middle burners off to avoid direct heat. Line 2 large baking trays with baking parchment.
  2. Cream together the butter and sugar. Add the egg and vanilla and mix well. method tip
  3. Add the flour, salt, baking powder, bicarbonate of soda & cocoa powder and mix until an even dough is formed.
  4. Add the chocolate chips and mix in well.
  5. Divide the mixture into 10-12 balls and spread out onto the baking trays, leaving about 6-8cm in between.
  6. Bake in the BBQ for 12-14 minutes with the lid down if possible, until the cookies have a cracked surface, they will be quite soft at this point, but will harden on cooling.
  7. Serving suggestion: Serve straight off the BBQ with a scoop of vanilla ice cream.
