This Key Lime Pie is very simple to make and utterly delicious!

Key Lime Pie Ingredients

For the base:
20cm (8”) loose-bottomed flan tin, greased
300 grams plain chocolate digestive biscuits
75 grams Butter
measurement converter send to mobile
 

Additional Ingredients

For the filling:

finely grated zest and juice of 5 large limes
400 grams can condensed milk, Light
300 ml carton double cream
 

Further Additional Ingredients

To decorate:

3 tbsp chocolate curls

How to make Key Lime Pie

  1. To make the base, place the biscuits in a plastic bag and bash with a rolling pin to make fine crumbs. Melt the butter in a pan and stir in the biscuits.
  2. Press the mixture into the tin and up the sides, pressing well with the back of a spoon. Chill the base while making the filling.
  3. Using a zester, pare the rind from 1 lime into strips and set aside for the decoration. Grate the remaining lime zest and squeeze all the juice. Place the juice in a mixing bowl with the condensed milk and cream and whisk until thickened. Stir in the grated lime zest then spread the mixture into the biscuit base. Chill for at least 1 hour.
  4. Decorate with the remaining lime zest and the chocolate curls. This pie will keep for 2-3 days in the fridge or can be frozen

"On the whole this is very pleasing. The biscuit base is to die for. I found that by using 5 limes a) the taste was just too sharp and b) the filling was quite liquid and didn't set well. Next time, and there definitely will be a next time, I will use only 4 limes. Very easy to make and recommend making it early for any dinner party."
