Lemon Fridge Tart Ingredients

Crushed biscuit base:
125 grams finely ground digestive biscuit crumbs
5 tbsp Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
85 grams Butter melted

Additional Ingredients

Topping

250 ml Double Cream
1 condensed milk (tin)
0.50 cup of fresh lemon juice
Grated rind of one lemon

How to make Lemon Fridge Tart

  1. To make the Biscuit Base Preheat the oven to 190 C / Gas mark 5
  2. Mix biscuit crumbs, sugar, melted butter and cinnamon until well blended. Press mixture into a 20 or 23cm (8 or 9 in) tart tin or pie dish
  3. Bake in the preheated oven for 7 minutes. Cool. If recipe calls for unbaked base, just chill for about 1 hour method tip
  4. to make the Topping Whip the cream until very stiff (dont turn it to butter)
  5. Add the tin of condensed milk and continue beating Add the lemon juice and rind and continue beating until the mixture is very thick
  6. Pour into biscuit base
  7. Sprinkle a little more of the lemon rind over the top and place in the fridge over night
