Spiced Pineapple

A delicious way to serve hot fresh pineapple. Serve with low fat yogurt or fromage frais.

1	Fresh pineapple large
0.50 tsp	Ground Cinnamon
1 tsp	Fresh Ginger
0.25 tsp	Ground mace
1 tsp	Lemon Grass finely chopped
1	lime Zest and Juice
1 tbsp	Half Spoon Granulated Sugar (Silver Spoon)
2 tbsp	Fresh Coriander chopped

Prepare the pineapple by slicing off the top and bottom with a sharp knife. Remove the outer skin slicing down, around the fruit. Cut across the fruit making slices 2.5cms (1inch) thick and place in a shallow dish.
Leaving the central core in will help hold the slices together during cooking.
Mix the remaining ingredients together excluding the coriander and spoon over the pineapple.
Preheat a griddle pan or health grill until hot.
Cook the pineapple briefly on each side for 1-2 minutes taking care not to allow to burn.
Serve sprinkled with freshly chopped coriander.
