Strawberry Meringue Splits Ingredients

4 Free Range Eggs (Happy Eggs) egg whites from large eggs Free Range Eggs (Happy Eggs)
225 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
500 grams Strawberries fresh strawberrys - chopped
225 grams Whipping Cream
icing sugar to dust

How to make Strawberry Meringue Splits

  1. Preheat the oven to ΒΌ gas, the lowest setting on a fan oven, 110C (conventional)
  2. Put the egg whites into a clean glass bowl and whisk with an electric beater until they begin to form stiff peaks.
  3. Add the sugar a little at a time and keep whisking until the mix is stiff and forms peaks that hold their shape.
  4. Now gently fold in the chopped strawberrys.
  5. Spoon about 20 blobs of the meringue onto 2 baking sheets and bake for about 2 hours or until they are crispy.
  6. Allow to cool in the oven.
  7. When cold, sandwich the meringues together with whipped cream and dust with icing sugar.
