How to make Winter fruits in Vanilla Syrup

  1. Place the fruits in sacepan; add the sugar, vanilla pod, wine and enough cold water to just cover the fruit.
  2. Bring to the boil. Reduce the heat and simmer for several minutes until the fruit is tender. Strain the fruit, reserving the cooking liquid, and set aside. Return the cooking liquid to the heat and cook briskly, reducing the liquid until thick and syrupy. Discard the vanilla pod. Stir the syrup into the fruit and leave to cool.
