Baked Chicken Ingredients

4 Chicken Breasts skinless
4 tbsp Mango Chutney
Wholemeal Breadcrumbs 4 slices
1 tbsp Freshly chopped herbs (Chives, Parsley, Coriander)
2 tsp Half Spoon Granulated Sugar (Silver Spoon) Half Spoon Granulated Sugar (Silver Spoon)
Salt & Ground Black Pepper

Grain Mustard Mash to serve

How to make Baked Chicken

  1. Preheat oven to 200°C, 400°F, Gas Mark 6.
  2. Spread the breadcrumbs out on a non stick baking tray.
  3. Bake in a preheated oven for 15-20 minutes until crisp.
  4. Place the chicken on a chopping board and spread both sides with the mango chutney.
  5. In a bowl, mix together the breadcrumbs, herbs and Silver Spoon half spoon. Season well with salt and black pepper and mix well.
  6. Press the chicken into the breadcrumbs coating all sides, then place on a lightly greased non stick baking tray, placing any excess crumbs on top.
  7. Bake in the oven for 30-35 minutes until thoroughly cooked.
  8. Check by inserting a knife into the thickest part of the meat. The juices should run clear when fully cooked. If in any doubt return to the oven for a further 10-15 minutes.
  9. Serve with grain mustard mash and a simple tomato salsa.
