Chicken Salad with Mango

This Chicken Salad with Mango is the perfect dish to eat outside in the Summer or as a side dish to a BBQ.

1	Lime Juice
1	Cloves Garlic crushed
1	Green Chilli, seeded and finely chopped
1 tbsp	Fresh Coriander, finely chopped
3 tbsp	Demerara Sugar (Billington's)
1 tbsp	Soy Sauce
450 grams	Chicken Breasts, skinned and cut into thin strips
1 tbsp	Olive Oil
200 grams	Mixed Salad Leaves
1	Mango, peeled and cut into chunks
25 grams	Pistachio Nuts

1 tbsp	Olive Oil For the dressing
1 tbsp	White Wine Vinegar For the dressing
1 tbsp	Demerara Sugar (Billington's) For the dressing

Prepare the marinade by mixing together the lime juice, garlic, chilli, coriander, Demerara sugar and soy sauce. Pour over the chicken or turkey and chill in the fridge for two hours.
Heat the oil in the wok. Add the chicken and marinade and stir for about 8 minutes.
Combine the dressing ingredients.
Place the mixed salad leaves, mango and chicken or turkey in a large bowl and toss gently.
Serve sprinkled with pistachios and drizzle with the dressing.
