Duck with Orange Glaze Ingredients

4 Duck Breast
1 Red Onion finely chopped
2 Orange Zest and Juice
Fresh Thyme few sprigs
Wineglass Port
3 tsp Half Spoon Granulated Sugar (Silver Spoon) Half Spoon Granulated Sugar (Silver Spoon)
2 tsp Arrowroot
Rocket leaves
2 Orange segmented
fresh mint leaves chopped

How to make Duck with Orange Glaze

  1. Preheat oven to 200°C, 400°F, Gas Mark 6.
  2. Prepare the duck by removing all the skin with a sharp knife. Season each breast well with salt and the pepper.
  3. Using a sharp knife slash the duck several times and place in an oven proof dish.
  4. In a saucepan heat the onion, orange zest and juice for 5 minutes.
  5. Add the port, thyme and Silver Spoon Low Calorie sweetener.
  6. Mix the arrowroot with a little water and stir into the glaze.
  7. Simmer until thickened then pour over the duck.
  8. Place in a preheated oven for 10 -12 minutes.
  9. Remove the duck from the oven and allow to rest for 5 minutes.
  10. Arrange the rocket leaves on a serving plate with the orange segments.
  11. Slice the duck into pieces; add to the salad and drizzle with the dressing.
  12. Garnish with chopped mint leaves.
