Fish Pie

An all time winner good enough for posh dinners but cheap enough for week days as well - especially when enhanced with Green Tabasco.  This fail safe pie has cod, smoked haddock and salmon in a creamy parsley sauce, topped with velvety mash, then baked to bubbling lusciousness.

Fish Pie Ingredients

700 grams Potatoes (peeled and cut into chunks)
150 ml Milk (warmed)
3 tbsp Double Cream
225 grams Smoked Haddock
225 grams Cod Fillet
225 grams Salmon Fillet
2 tbsp Oil
1 Onion (peeled and finely chopped)

For the Sauce

50 grams Butter
50 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
600 ml Milk
1 tbsp Parsley (fresh, chopped)
1 pinch Salt
1 pinch pepper
12 Green Pepper Sauce (Tabasco) (drops)

How to make Fish Pie

  1. Cook potatoes in lightly salted boiling water until tender. Drain and leave for a few minutes with a clean tea towel tucked over the potatoes to steam through for a few minutes. This makes them easy to mash. Mash, then add warmed milk and cream and continue mashing until smooth.
  2. Next poach the fish. Place fillets in a sauté pan and cover with water bring to bubbling, then turn down to a low light and leave to cook with the barest ripple on the poaching water. Heat oil in a pan and fry onion over low heat until softened but not brown. Transfer to a baking dish.
  3. For the sauce, melt butter in a pan and add flour. Cook over medium heat for a minute. Gradually add milk, stirring until sauce is thickened and smooth. Stir in parsley. Season with salt and freshly ground pepper and Green Tabasco.
  4. When fish is poached, remove from pan and blot on kitchen paper. Flake into large chunks and distribute over the bottom of the pie dish, on top of onions. Pour over sauce - and lightly stir in the baking dish to amalgamate. Spoon over mash and smooth over, then rough up the surface so the little peaks brown. in the oven Bake in a pre-heated oven Gas 6 400F 200C for around 25 minutes or until heated through and bubbling.
