Why not try this delicious Low Calorie Gazpacho.  A deliciously fresh cold tomato soup. The amount of sugar you will need for this recipe will depend on the sweetness of the tomatoes. Taste and add more sugar as necessary.

Low Calorie Gazpacho Ingredients

1 kg Tomatoes fresh
2 Cloves of Garlic
1 Red Pepper diced
½ cucumber, deseeded and diced
2 slices day old white bread, roughly cubed
2 tbsp chopped mint
125 grams red wine vinegar
3 tsp Half Spoon Granulated Sugar (Silver Spoon) Half Spoon Granulated Sugar (Silver Spoon)
125 ml Olive Oil

How to make Low Calorie Gazpacho

  1. Cut a small cross in the bottom of the tomatoes and place in a bowl of boiling water. Leave for 7-9 minutes. Drain and then plunge into cold water. Peel the skins off the tomatoes. Cut into cubes and place in a mixing bowl with the garlic, peppers and cucumber.
  2. Add the bread, mint, vinegar, sugar and olive oil. Cover and chill for about 1 hour or preferably over night. Taste and adjust the taste with sugar.
  3. Serve with pitta bread.
