Smoked Salmon Bilini Ingredients

70 grams Plain Wholemeal Flour (Allinson) Plain Wholemeal Flour (Allinson)
70 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 tsp Baking Powder
175 ml Milk (whole, warmed)
1 Free Range Eggs (Happy Eggs) (seperated) Free Range Eggs (Happy Eggs)
100 grams Butter
1 tsp Easy Bake Yeast (Allinson) Easy Bake Yeast (Allinson)

How to make Smoked Salmon Bilini

  1. Sieve the flours and baking powder together into a bowl. Add the dried yeast to the warmed milk and then add the egg yolk.
  2. Whisk the milk/egg mixture into the dry ingredients to make a smooth batter. Add 1 tspn of melted butter and stir until combined.
  3. Whisk the egg whites until they are stiff, then gently fold into the batter, trying to keep as much volume as possible.
  4. Clarify the rest of the butter by gently melting it in a pan, then pour off the clear yellow liquid into a jug and discard the white bit left behind in the pan.
  5. Heat some of the clarified butter in a frying pan and drop in dessert spoonfuls of batter. Cook until the surface starts to bubble, then flip over and cook the other side.
  6. Cool, then serve with smoked salmon and crème fraiche.
