Ginger Scones

Try these scones with a twist delicious served with the traditional jam and clotted cream.   A perfect scone should have a split along the center so you can rip in halve and not use a knife.

Ginger Scones Ingredients

225 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
Pinch Of Salt
55 grams Butter
25 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
2 Stem Ginger drained and finely chopped
150 ml Milk Milk
2 tbsp Demerara Sugar (Silver Spoon) Demerara Sugar (Silver Spoon)

How to make Ginger Scones

  1. Heat the oven to 220°C/fan oven 200°C, 425°F/Gas 7. Lightly grease a baking sheet. method tip
  2. Mix together the flour and salt and rub in the butter until the mixture resembles breadcrumbs. method tip
  3. Stir in the sugar and stem ginger and then enough milk to get a soft dough.
  4. Turn on to a floured work surface and knead very lightly.
  5. Pat out to a round 2cm thick, there is no need to use a rolling pin. Use a 5cm cutter to stamp out rounds and place on a baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.
  6. Brush the tops of the scones with a little milk and a sprinkling of demerara sugar. Bake for 12-15 minutes until well risen and golden. method tip
  7. Tips Replace the stem ginger with walnuts, handful grated cheese or dried cranberries.

"Made some for the Parish Christmas Bring and Share Tea. All were scoffed before I got a chance to grab one. Made another batch for another event and kept a couple back. All were grabbed before I could get to the table once more, but this time I had my "reserve". Definitely the best ginger scones ever."
