Cheese, Bacon and Tomato Muffins Ingredients

100 grams Smoked Back Bacon Rashers
275 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 tbsp Baking Powder
1 tsp Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 tsp Salt
125 grams Gruyere Cheese Grated
2 Tomatoes De-Seeded And Chopped
2 tbsp Chives Chopped
2 Free Range Eggs (Happy Eggs) Free Range Eggs (Happy Eggs)
200 JUST MILK JUST MILK
75 grams Butter Melted

How to make Cheese, Bacon and Tomato Muffins

  1. Preheat the oven to 190°C,fan 170°C, gas mark 5. method tip
  2. Line a muffin tin with 10 paper muffin cases or greasproof paper. Grill the bacon until crispy and chop into pieces.
  3. In a large bowl, sift together flour and baking powder.
  4. Stir the sugar, salt and three quarters of the cheese, bacon, tomatoes and chives into the flour mixture and mix well.
  5. In another bowl, beat together the eggs, milk and melted butter and pour over the dry ingredients. Stir until just combined, the batter will be lumpy. Fill the muffin cases and sprinkle the tops with the reserved cheese. method tip
  6. Bake for 20-25 minutes until risen and firm. Delicious eaten warm or cold.

"Drier/thicker batter than I expected for muffins but taste great. I didn't think they needed any more salt with the bacon and cheese, so added pepper instead"

"I made these but slightly changed the recipe. I used Self Raising Flour and no Baking Powder. I did not use the Salt. I used Sundried Tomatoes rather than ordinary Tomatoes and i used Mature Cheddar Cheese! They were wonderful and loved by all who tried them! "

"I didn't include the chives as I didn't think it was needed, and the muffins could maybe has done with a bit more bacon, but this recipe was delicious and resulted in a very happy family on Saturday morning!"
