Banana, Sesame and Cardamom Loaf

This recipe is baked in a savain mould. It bakes into a ring bread. Try using over ripened bananas for extra sweetness and moist texture in the baked bread. Delicious sliced with chocolate spread, peanut butter or mashed banana!

Ingredients
| 200 grams | Allinson Premium Wholemeal Very Strong Bread Flour | ![]() |
| 200 grams | Allinson Premium White Very Strong Bread Flour | ![]() |
| 1 tsp | Billington's Golden Granulated Sugar | ![]() |
| 2 tbsp | Malt Extract | |
| 2 | Bananas Mashed | |
| 25 grams | Sesame Seeds | |
| 10 | Cardamom Pods Split, Seeds Removed And Finely chopped or crushed | |
| 7 sachet | Allinsons Easy Bake Yeast | ![]() |
| 1 | Egg Beaten | |
| 200 ml | Water Warm |
Method

- Place all of the ingredients into a mixer with a dough hook attached. Mix to a soft dough and knead for 5 minutes.
- If mixing by hand, put the flour, sugar, malt extract, bananas, sesame seeds and cardamom into a bowl and sprinkle on the yeast.
- Mix to a soft dough with the egg and water.
- Knead on a floured board for 10 minutes.
- Roll into a sausage shape to fit a (21cm/8½” diameter) savarin mould.
- Leave to prove until double in size. Meanwhile preheat the oven to 190°C/fan 170°C/Gas Mark 5
- Bake for 30 minutes.
