Banana, Sesame and Cardamom Loaf

This recipe is baked in a savain mould. It bakes into a ring bread. Try using over ripened bananas for extra sweetness and moist texture in the baked bread. Delicious sliced with chocolate spread, peanut butter or mashed banana!

Ingredients

200 grams Allinson Premium Wholemeal Very Strong Bread Flour
200 grams Allinson Premium White Very Strong Bread Flour
1 tsp Billington's Golden Granulated Sugar
2 tbsp Malt Extract
2 Bananas Mashed
25 grams Sesame Seeds
10 Cardamom Pods Split, Seeds Removed And Finely chopped or crushed
7 sachet Allinsons Easy Bake Yeast
1 Egg Beaten
200 ml Water Warm

Method

  1. Place all of the ingredients into a mixer with a dough hook attached. Mix to a soft dough and knead for 5 minutes.
  2. If mixing by hand, put the flour, sugar, malt extract, bananas, sesame seeds and cardamom into a bowl and sprinkle on the yeast.
  3. Mix to a soft dough with the egg and water.
  4. Knead on a floured board for 10 minutes.
  5. Roll into a sausage shape to fit a (21cm/8½” diameter) savarin mould. method tip
  6. Leave to prove until double in size. Meanwhile preheat the oven to 190°C/fan 170°C/Gas Mark 5
  7. Bake for 30 minutes. method tip
