Berry Bread

Try using homemade gooseberry jam for a special touch to this sweet Berry Bread. Make this recipe your own by changing the dried fruit to sultanas or cranberries. Delicious freshly baked, toasted or in a fruity bread and butter pudding.

Berry Bread Ingredients
| 450 grams | Very Strong Bread Flour (Allinson Premium White) | ![]() |
| 100 grams | Blueberries semi dried | |
| 1 tsp | Salt | |
| 1 sachet | Easy Bake Yeast (Allinson) 1 x 7g aachet | ![]() |
| 4 tbsp | Gooseberry Jam | |
| 3 tbsp | Melted Butter | |
| 1 | Happy Eggs Medium, Beaten | ![]() |
| 115 ml | Water | |
| 115 ml | JUST MILK | ![]() |

How to make Berry Bread

- Put the flour, blueberries and salt into a bowl and sprinkle the yeast over.
- Mix to a soft dough with the jam, butter, egg, water and milk.
- Turn onto a floured surface and knead for 10 minutes.
- Shape as desired and put into an appropriate greased tin.
- Leave to prove until double in size. Preheat the oven to 220 C/fan 200 C/Gas Mark 7
- Place in the preheated oven and immediately turn the oven down to 200 C/fan 180 C/Gas Mark 6 and bake for 25-30 minutes.
- Cool in a wire rack before slicing.
